Instructions

   Shape dough into a disk, wrap in plastic, and chill for 30 minutes.

   Roll out dough on a floured surface to a 12-inch circle.

   Transfer dough to a parchment-lined baking sheet.

   In a separate bowl, combine peach slices, brown sugar, cornstarch, cinnamon, and vanilla extract.

   Arrange peach mixture in the center of the dough, leaving a 2-inch border.

    Fold edges of the dough over the peaches, pleating as needed.

    Brush dough edges with beaten egg.
