Ingredients

• Shelled pistachios - 1 cup
• Whole milk - 2 cups
• Heavy cream - 1 cup
• Granulated sugar - ¾ cup
• Salt - ¼ teaspoon
• Vanilla extract - 1 teaspoon
• Egg yolks - 4

Instructions

   Blend pistachios and 1/2 cup sugar in a food processor until finely ground.

   In a medium saucepan, combine milk, cream, and salt. Heat until just simmering.

   Whisk egg yolks and remaining sugar in a bowl until pale.

   Slowly pour hot milk mixture into yolk mixture, whisking constantly.

   Return mixture to saucepan and cook over medium heat, stirring, until thickened.

   Remove from heat, stir in vanilla and pistachio mixture.

   Chill the mixture thoroughly in the refrigerator.

   Freeze in an ice cream maker according to manufacturer's instructions.
