Instructions

Line a baking dish with edible rice paper.

In a saucepan, combine sugar, corn syrup, and water. Cook over medium heat until sugar dissolves.

Increase heat and bring to a boil without stirring until the mixture reaches 140°C (285°F) on a candy thermometer.

In a separate bowl, beat egg whites and salt until soft peaks form.
5.
Gradually pour the hot sugar syrup into the egg whites, beating constantly on high speed until the mixture thickens and holds its shape.
6.
Mix in vanilla extract, almonds, and pistachios.
7.
Spread the nougat mixture evenly into the prepared dish and cover with another layer of rice paper.
8.
Allow to cool completely at room temperature before cutting into pieces.
