Ingredients

• Chocolate cookie crumbs - 2 cups
• Unsalted butter, melted - ½ cup
• Cream cheese, softened - 24 oz (3 packages)
• Granulated sugar - 1 cup
• Sour cream - 1 cup
• Eggs - 3 large
• Vanilla extract - 1 teaspoon
• Instant coffee granules - 2 tablespoons
• Hot water - 2 tablespoons
• Semisweet chocolate, melted - ½ cup

Instructions

   Preheat the oven to 325°F (163°C).

   Mix chocolate cookie crumbs and melted butter, then press into the bottom of a 9-inch springform pan.

   In a large bowl, beat cream cheese and sugar until smooth.

   Add sour cream, eggs, and vanilla extract, and mix until combined.

   Dissolve coffee granules in hot water, then add to the cream cheese mixture.

   Stir in melted chocolate until the mixture is smooth.

   Pour the batter over the prepared crust.

   Bake for 55-60 minutes, or until the center is set.

   Turn off the oven and let the cheesecake cool inside with the door ajar.

    Refrigerate for at least 4 hours before serving.
