Ingredients

• Graham cracker crumbs - 1 ½ cups
• Unsalted butter, melted - ¼ cup
• Sugar - 1 cup
• Ricotta cheese - 2 cups
• Cream cheese, softened - 8 oz (225g)
• Eggs - 3 large
• Lemon zest - 1 tablespoon
• Lemon juice - ¼ cup
• Vanilla extract - 1 teaspoon
• Salt - ¼ teaspoon

Instructions

   Preheat the oven to 325°F (165°C).

   In a bowl, mix graham cracker crumbs and melted butter until combined.

   Press the mixture into the bottom of a 9-inch springform pan.

   In a large bowl, beat ricotta cheese, cream cheese, and 3/4 cup of sugar until smooth.

   Add eggs one at a time, beating well after each addition.

   Mix in lemon zest, lemon juice, vanilla extract, and salt.

   Pour the cheese mixture over the crust in the pan.

   Bake for 50-60 minutes, or until the center is set and edges are lightly golden.

   Let cool at room temperature for 1 hour, then refrigerate for at least 4 hours before serving.
