Ingredients

• All-purpose flour - 1 ¼ cups
• Unsalted butter - ½ cup
• Confectioners' sugar - ¼ cup
• Salt - ¼ teaspoon
• Egg yolks - 5
• Granulated sugar - 1 cup
• Lemon juice - ½ cup
• Lemon zest - 1 tablespoon
• Heavy cream - ¼ cup

Instructions

   Preheat the oven to 180°C (350°F).

   In a bowl, mix flour, confectioners' sugar, and salt. Add butter and mix until crumbly.

   Press the mixture into a tart pan. Prick the base with a fork.

   Bake the crust for 20 minutes or until golden. Let it cool.

   In a saucepan, whisk together egg yolks, granulated sugar, lemon juice, and zest over medium heat.

   Stir constantly until the mixture thickens, about 10 minutes. Remove from heat.

   Strain the lemon mixture into a bowl and stir in heavy cream.

   Pour the lemon curd into the cooled tart shell.

   Chill in the refrigerator for at least 2 hours before serving.
