Ingredients

• Granulated sugar - 2 ½ cups
• Light corn syrup - ½ cup
• Water - ½ cup
• Egg whites - 2 large
• Vanilla extract - 1 teaspoon
• Pecans - 1 cup, chopped
• Salt - 1/8 teaspoon

Instructions

   In a saucepan, combine sugar, corn syrup, and water; cook over medium heat, stirring constantly, until sugar is dissolved.

   Continue cooking without stirring until the mixture reaches 260°F on a candy thermometer.

   Meanwhile, in a large bowl, beat egg whites with salt until stiff peaks form.

   Slowly pour the hot syrup into the egg whites, beating constantly on high speed.

   Add vanilla extract and continue beating until the candy holds its shape, about 5-6 minutes.

6. 6.

   Fold in pecans quickly before the mixture begins to harden.

   Drop by teaspoonfuls onto waxed paper and let cool completely.
