Ingredients

• All-purpose flour - 1 ¾ cups
• Granulated sugar - 1 cup
• Unsalted butter - ½ cup
• Baking powder - 1 ½ teaspoons
• Salt - ½ teaspoon
• Eggs - 2 large
• Vanilla extract - 1 teaspoon
• Brewed coffee - ½ cup
• Milk - ¼ cup
• Instant coffee granules - 2 teaspoons

Instructions

   Preheat the oven to 180°C (350°F) and line a cupcake tray with liners.

   In a bowl, mix together the flour, baking powder, and salt.

   In another bowl, cream the butter and sugar until light and fluffy.

   Add the eggs one at a time, beating well after each addition.

   Stir in the vanilla extract.

   Dissolve the instant coffee granules in the brewed coffee and add to the mixture.

   Alternate adding the dry ingredients and milk to the wet mixture, starting and ending with the dry ingredients.

   Divide the batter evenly among the cupcake liners.

   Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.

    Let the cupcakes cool completely before serving.
